What is Food Poisoning?

Food poisoning results when you eat food contaminated with bacteria or other pathogens such as parasites or viruses. Your symptoms may range from upset stomach to diarrhea, fever, vomiting, abdominal cramps and dehydration. Most such infections go undiagnosed and unreported.

But the Center for Disease Control and Prevention estimates that each year about 76 million people in the United States become ill from pathogens in food, and about 5,000 of them die.

Over 55% of such cases are caused by improper cooking and storage of foods, and 24% by poor hygiene, such as not washing your hands while preparing food. Only 3% of cases are from unsafe food sources. Keeping your hands clean while working with food is the single most important thing you can do to prevent food poisoning.

About 20 organisms can cause food poisoning. After you eat food contaminated with bacteria, they will multiply in your stomach and bowels. Some bacteria give off a toxin when they multiply. As a result, nausea, vomiting, abdominal cramps and diarrhea occur. Vomiting and diarrhea are the body's way of eliminating the toxin, and most cases of food poisoning run their course without needing medical attention.

Not all invasive organisms cause vomiting as a symptom, but almost all of them cause diarrhea. Blood in your stool occurs in many types of food poisoning and is considered to be serious. Abdominal cramps are also common, and sometimes you will have a fever. Be sure to contact a physician if a fever or bloody stools are present.

Common Sources of Food Poisoning

Campylobacter is the leading cause of bacterial food poisoning in the USA. It causes several million cases a year, resulting in hundreds of deaths. Eating undercooked chicken or food that has been in contact with raw chicken most commonly causes campylobacter. The Center for Disease Control estimates that up to 70%-90% of chickens are infected with campylobacter.

To prevent the disease, cook chicken thoroughly, with no pink remaining. Wash your hands frequently when handling raw chicken. Use paper towels to dry your hands. If you are using a sponge or dish-cloth to clean the counters, use a fresh one after working with raw chicken. Wash your cutting board with a diluted bleach solution before using again. And any utensils or dishes having contact with raw chicken need to be washed and rinsed with soap and water before using again.

E. coli 0157: H7 infection causes an estimated 25,000 cases of food poisoning each year in the USA. Most of these result from undercooked, contaminated ground beef. The organism lives in the intestines of healthy cows. Meat can become contaminated during slaughter when intestinal fecal matter is mixed with beef that is ground into hamburger. Contaminated meat looks and smells normal, so it is not readily detectable. Bacteria on cow udders or milking machines can also contaminate raw milk.

To prevent this form of food poisoning, cook all ground beef until no pink is showing. Make sure all of the meat juices are clear, not pink or red, and that the inside of the meat is hot. If you are served an undercooked hamburger in a restaurant, send it back. Consume only pasteurized milk products, and drink only water treated with chlorine or other disinfectants.

Botulism is caused by clostridium botulinum, a spore-forming bacteria. This form of food poisoning is very rare, but can be life-threatening. It may result from eating improperly processed, low-acid foods such as green beans, mushrooms, spinach, olives and beef or fish. Improper home canning methods often account for botulism cases. Improperly processed commercial products can also cause this serious disorder.

To avoid botulism, don't even taste canned food that is soft, deteriorating, fermenting or doesn't smell right. It isn't worth a life-threatening illness. When in doubt, throw it out.

Infant botulism is more common in spring and summer, and is rare in winter. Infants younger than one year of age are at the highest risk. Symptoms include muscle weakness, a weak cry, difficulty in feeding, constipation, head lag, increased heart rate and a decreased gag reflex. A baby with botulism is described as a "floppy baby," as the infant will have weak muscles, especially in the arms, legs and neck.

Infant botulism has been associated with eating honey. The Center for Disease Control suggests that honey should not be given to infants under six months old, and the Honey Industry Council extends the safety limit to one year. Honey is not an essential food for infants, and should never be given to them.

Summary of Food Poisoning

Most symptoms such as nausea, vomiting, abdominal cramps and diarrhea are due to viral infections and are not true cases of food poisoning. An accurate diagnosis can be difficult because the pathogenic organisms are found in different kinds of food and have varying incubation periods. Also, eating a substance and getting sick immediately afterwards is not the typical course for food poisoning. Most people are not aware that food eaten several days previously can be the cause of food poisoning. Always be sure to consult a physician when experiencing severe gastrointestinal symptoms.

There are dozens of variations of food poison, and none of them are pleasant. One of them is Bacillus cereus. While not usually life threatening, this common form of food poisoning can cause diarrhea, nausea, cramps and vomiting. Symptoms usually appear 8-16 hours after exposure to the bacteria, and can disrupt your life for a few days.

Bacillus cereus is usually caused by improper cooking. The problem can be exacerbated by improper refrigeration, which just allows the spores to further grow. Cooked rice that is improperly refrigerated is one of the most common carriers of bacillus cereus.

However, researchers are learning that there may be ways to protect our bodies from the ravages of such bacteria. It appears that tea's catechins may protect our bodies from bacteria like bacillus cereus. Tea has far more anti-microbial properties than previously realized.

One particular study reported by the UK Tea Council evaluated the anti-microbial activity of seven green tea catechins and four black tea theaflavins, both important anti-oxidants. They also evaluated actual infusions of 36 commercial black, white, green and oolong teas, as well as herbal teas. These anti-oxidants and infusions were evaluated to determine their anti-microbial activity against bacillus cereus. This study concluded that all eleven of the anti-oxidants evaluated contained anti-microbial properties.

In fact, most of the compounds were more active than medicinal antibiotics such as tetracycline or vancomycin at comparable concentrations. The study also concluded that the brewed infusions of true tea that contained these catechins and theaflavins also had anti-microbial properties as well, particularly freshly brewed infusions. However, herbal brews did not have anti-microbial properties.

So, just what does this mean to our real life? Well, it means that drinking tea can protect your body against certain harmful bacteria like bacillus cereus. If we consume tea on a regular basis, we may be able to ward off these harmful bacteria before they wreak havoc on our bodies. The presence of the anti-oxidants in tea may be enough to keep us from getting sick from these bacteria, or at least be sufficient to lessen their effects.

This is likely just the tip of the iceberg. We already know that green tea prevents many serious illnesses, such as heart disease, Alzheimer's disease and some forms of cancer. And, if we've determined that it can kill bacteria such as bacillus cereus, then there's certainly potential that it can act as an anti-biotic against other harmful bacteria, as well.

Certainly it has been determined from this along with many other studies that tea is an important part of living a healthy life. In Japan, the medical community recognizes green tea as a known cancer preventative, and it's likely that medical communities in other countries will soon follow suit. This information, combined with the other studies that have shown green tea to be effective in preventing heart disease should be enough to convince us that drinking a few cups of green tea each day is a simple way to protect our health.

But, why is does it seem that so many of the positive findings are associated with green tea, and not black tea too? Well, it stems from the way the tea is processed. While the study noted here on the anti-microbial activity of tea didn't find a difference between the two, in most health studies green tea beats black tea every time.

Black tea is fermented during processing; green and white teas are not. The fermentation process changes the anti-oxidants in the tea from their natural, original state, into a slightly different compound. While black tea is still healthy, and still contains important anti-oxidants, the more natural anti-oxidants in green and white tea are far more powerful.

The research done so far has mostly been performed on green tea because it is much more widely consumed. However, it is likely that researchers would find that white tea is just as healthful, since its anti-oxidants are preserved in their natural state, just like those in green tea.

Everyone talks about recommended dietary allowance of RDA. But very few people know the exact interpretation. Generally it is perceived as the daily requirement of a nutrition. In the case of folic acid RDA many think it is the daily requirement of folic acid. It is not so. It is the allowance having some tolerance of more or less than the requirement. It is impossible to determine the exact requirement of any nutrition for a particular individual.

Before we understand RDA let us know another important reference in nutrition intake. That is called dietary reference intake or DRI. This is the reference value used for planning and assessing nutrient intake for healthy people. Under DRI three types of reference values are listed. One is the RDA. This is the scientifically observed reference value that shows the dietary allowance for majority of the people across all age and gender who leads a healthy life. Next is adequate intake AI reference. Here there is no scientifically observed reference value because of insufficient data to establish RDA. It is not that reliable but believed to be more or less tenable. Third type is the tolerable upper intake level UL. Folate is an important nutrition for many health reasons. Hence folic acid RDA has to be understood properly.

Folate is essential for cell formation and maintenance. For pregnant woman this nutrition is vital to ensure a healthy baby. For those with irritable bowel syndrome (IBS), controlling your diet is a very important part of reducing the symptoms of the condition. So where do you find the different forms of fiber? Both insoluble and soluble fiber are contained in all plants foods, with the ratio varying dependent on the plant type. Insoluble fiber is typically found in whole wheat, wheat and corn bran, flax seed lignans and vegetables including carrots, celery, green beans and potato skin. Soluble fiber is found in rice and rice cereals, pasta, oatmeal, cornmeal, barley, quinoa and soy. You can also find soluble fiber in vegetables such as carrots, yams, sweet potatoes, turnips, pumpkins and mushrooms. Papayas are also a particularly good source of soluble fiber, with the added bonus that they are a digestive aid that relieves flatulence and indigestion.

While Green Slime Disease is known to be curable, a more serious and fatal ferret disease is Adrenal Disease. As the name suggests this illness affects the adrenal gland, which grows and causes abnormal amounts of adrenal hormones to enter the ferret's blood steam, so much so that the hormones can increase to lethal levels. Hence, recognizing the symptoms of this horrible disease is essential. As a rule of thumb, take your little fur ball to the vet if it begins to show hair loss and excessive scratching. For female ferrets, also be on the lookout for swollen "lady-parts".

In addition to all the above-mentioned ferret diseases, these loving creatures can be susceptible to various kidney and heart problems. While kidney problems can be recognized by increased water consumption and increase in the frequency of urination, heart problems lead to symptoms such as weight loss, coughing, exercise intolerance, and shortness of breath.

Moreover, since ferrets generally have a weak immune system, they are also prone to various forms of allergies and cold. It is important that you note that they can contract flu very easily, even from humans, therefore if you have any form of influenza or virus, it is best to avoid going near your pet as your ordinary flu could prove to be fatal for your furry friend.

A newer and possibly more common health issue is that of obesity. Since these little creatures love treats, novice owners can become more inclined to giving their ferret these treats on a regular basis under the false assumption that they are keeping their pet happy. In the long run, these treats can cause serious problems for the animal by resulting in muscular, cardiac and liver troubles. Therefore, avoid giving your ferret too many treats and instead make sure that it incorporates regular exercise in its day.

Above all though, provide your ferret a clean and hygienic environment. This alone will go a long way to preventing the spread of ferret diseases and illnesses.

My friend has been ill for 10 days with horrible diarrhea, and her doctor found yeast in a stool culture. She came upon a woman who had her symptoms for three weeks before she learned she had yeast in her stomach. It is called H. Pylori. She is waiting for her doctors to determine if this is her problem. She wants to know if she can cure this herself with a candida cleanse, as she would prefer to heal herself with an elimination diet and probiotics, rather than Rx drugs.

H. Pylori are bacteria, not fungus. In fact, IIRC, it is the bacteria implicated in ulcers. It can give you diarrhea when you get it. It is different way in every person, and you will probably need antibiotics to get rid of it. Take plenty of probiotics while on the antibiotics. Garlic will combat both bacteria and viruses. Fresh is better, but if you don't feel much like eating right now, pills will do!

You can also follow the candida diet, without eat or drink acid things and don't overeat. Try to eat every 3-4 hours.
